I’ll never claim to be well-practiced in Haitian cuisine. The best I could do was search some recipes and combine a few ideas to create this take on Haitian French Toast, which includes fresh mango and drizzled honey.
Every week here at Insanewiches, I try to post something to make you laugh or provide a moment of escape. But I start this week off on a serious note, hoping you’ll find it in yourselves to help survivors of the Haitian earthquake. It’s easy to donate through Google Crisis Response.

You could be on a nature hike. Or you could be planted firmly on the couch watching the tube. Either way, these trail mix mini ‘wiches’ll fill in the hunger gapwich nicely. The “bread” for these are made with almond slivers, pecans, walnuts and cashews. The fillings are raisins (regular and yogurt-covered) and dried cranberries.

Each ingredient in this Japanese-inspired insanewich – the tempera sweet potato, ginger, and sashimi –was expertly carved using a katana sword…OK, OK, that’s a lie. But doesn’t it look exotic! And oh, by the way, the green stuff is wakame seaweed.

Meet the Southern-most Insanewich on Earth. It’s the Monster Burger from Bluff, the town at the very bottom of the South Island of New Zealand. It contains two beef patties, lettuce, several layers of cheese, bacon AND a steak. It does not use meat as bread, but probably should.

The Beatniks are coming…In sandwich form! This beatnik sandwich is made with actual pureed beets on top of tangy sour cream with pumpernickel bread. Are you hip to this ‘wich?
